new laminated pastries

We are so excited to announce our new laminated pastries — Croissant, Chocolate Croissant, and Tomato Tarts. They are delicious! We are using awesome, locally made butter, which is a big part of the reason these pastries are so darn good. The other reason is that we take the time to make them the old-fashioned way, a lengthy process of creating dozens of layers of dough and butter. It’s a lot of work but well worth it. We’re playing with some other ideas… fruit tarts, etc., and expect to have more new items available in the next week or so.
Little T owner & baker Tim Healea earned a silver medal at the Coupe du Monde de la Boulangerie (World Cup of Baking) in 2002 for his viennoiserie skills (laminated doughs), competing against the best in the world… we’re putting his skills to good use!
We are making Croissants fresh every day, of course, and they’re normally ready around 8:30 or 9 in the morning for optimum freshness… so please don’t be upset if they’re not yet out of the oven at the crack of dawn. Tomato Tarts are made with local organic tomatoes and herbs, and are available most days at lunchtime.

Coming up this weekend is the Division/Clinton Street Fair on Saturday July 26. For those of you who live in SE (and even those who don’t), we hope you’ll come check it out. It’s a really fun, family-friendly event, complete with a parade and art contest. The bakery will be open regular Saturday hours (7-5), so please stop in for refreshments.

Summer’s in full swing, and we’ve got the berries to prove it! We’re getting fantastic berries from Viridian Farm, and serving them in muffins, with granola + nancy’s yogurt, and with Swedish Cream (a most refreshing summer dessert). We’ve also got a new banana bread that is getting rave reviews. Soon we’ll be adding laminated doughs (danish, puff pastry) to our repertoire, and creating some of Tim’s favorite pastries.
We just got the menus posted on the site, so please have a look. We’re also getting together a Happy Hour menu, which we’ll start serving in the next couple weeks. Happy Hour will be 2:30-5pm weekdays, and we’ll have a number of savory bites for $2.50. Also coming soon… outdoor seating! The perfect place to sip your O’Reilly’s Riesling on a sunny afternoon…

4th Update:
If you’re checking to see if we’re open today, the late answer is yes! We’re open at 8am and we’ll be serving the full menu until 2pm. Hope everyone has a great 4th of July!
Also, as of the 1st, we’re able to sell beer and wine. We’ve got a great selection of local red and white wines from O’Reilly’s (Owen Roe’s affordable line of fantastic wines) and local microbrews. Both make a nice complement to our fresh sandwiches on handcrafted bread.
One more thing: we now have a take out menu that we will be posting soon on line. For now, come on in and ask for a copy…or just use it here at the cafe, if you have trouble reading our chalkboard menu.

little t american baker will have its official grand opening this coming Tuesday, June 17. We’ve spent the past couple of weeks testing new breads, pastries and sandwiches, learning the nuances of our new equipment, and practicing our customer service skills. We’re pretty happy with how things are going, though there’s still plenty of room to grow… Thanks to everyone who has visited so far and wished us well!
So please join us on the 17th as we celebrate the new bakery with plenty of free stuff and special giveaways, including delicious coffee courtesy of our great friends at Stumptown Coffee Roasters.

little t opened today at 4pm after getting our final approval from the city. Feel free to drop by this weekend and check out our sneak preview “soft” opening, while we try out some recipes and find our groove.

Many people have stopped by and peeked through the paper on the windows, and I know a lot of people are wondering when we’re opening… Well, the good news is that we’re hours aways now, rather than days. The paper will be coming down tomorrow, and then just a few finishing touches, a couple of inspections, and we’ll be ready to swing open the doors for business. Right now, it’s looking like Friday afternoon, May 30, is the best guess. Keep checking this spot for the latest news!
In the meantime, we’ll be testing recipes and getting ready to bake! We’re also looking forward to being the daytime “hang out” for this weekend’s QDoc Film Festival at the Clinton Theater. Hope to see you very soon….

It’s official! The paint might still be drying, but little t is planning to open May 29 to coincide with the opening day of the QDoc film festival at the Clinton Theater, just one block from the bakery. QDoc, Portland’s queer documentary film festival, is one of only two such events in the world. Be sure to check out the festival program, available on line beginning May 7, and then drop by little t before or after the movies! little t american baker is proud to be an event sponsor of QDoc.
