little t american baker is operated by owner/baker Tim Healea, who has been baking professionally in Portland since 1998. In 2002, he was on the US team that competed at the Coupe du Monde de la Boulangerie in Paris, and earned the silver medal in the competition for best bakers in the world. The name 'little t' comes from the nickname Tim earned while serving on the team, since he was the youngest person to earn a spot on the team at the time. Before opening little t in 2008, Tim was the longtime head baker at Pearl Bakery and a consultant for Kenny & Zuke's Delicatessen. He has also taught bread baking locally, nationally and internationally in Japan and Malaysia. Tim is a member of the Bread Bakers Guild of America and a former board member. In 2005, he was named one of the top 35 people in food & wine under the age of 35 by Food & Wine in its Tastemaker Awards, and in 2010 was honored with a Leadership Award for Quality from Modern Baking.

Tim leads a team of talented bread and pastry bakers, who use their trained hands and baking knowledge everyday to produce baked goods of the highest quality. little t only uses basic ingredients, such as flour, butter, eggs, sugar, yeast and milk, and traditional methods of mixing, fermenting and shaping dough. Every item in our bakery case and window bread display is baked on-site in our very small bakeshop.

Our WP Matador deck oven is specially designed to allow us to bake bread and
pastry simultaneously so we can continually bake fresh product throughout the day. We begin our day every morning between 4am-5am so that our bread and pastry are just coming out of the oven fresh when we open our doors at 7am. We appreciate your patience if you have to wait a bit for things to finish baking, or for the next batch to come out of the oven.
